Gingerbread Snowflakes?

We love gingerbread cookies-- especially when it is cold outside. Last week was snowy so Talon and I used our snowflake cookie cutters.


Talon loves rolling out dough and cutting out cookies but his favorite part, next to eating cookies of course,  is painting  cookies. Looks like he is drowning them more than painting them.  Don't worry, the lemon glaze is thin so the cookies are not overpowered.

We used 4 snowflake shapes but they all turned out looking about the same-- Oh well, it didn't affect the gobbling any.

So what kind of gingerbread cookies do we like?
Yep, good ol' trusty Betty Crocker!  So easy and tasty. Just add a stick of butter and one egg and that is it-- except for the rolling ect.  The cookies are spicy and moist... yum!

The only problem is that this mix is only available during the holiday season. I stock up on enough to make it through the winter. I've got 2 packets left.

So: To ration or not to ration, that is the question!

Halloween Party!

I really like Talon's teacher. Most school parties involve eating and booting out the door home but Mrs. F always has fun projects and events for the kids-- all the time-- and for the Halloween party she went all out.

Talon told his teacher I would make homemade chocolate chip cookies for his party-- which I did but they just aren't very Halloweeny so I also made... 

 Gingerbread pumpkin cutouts with lemon glaze and green sugar stems. This is the bottom layer so looks a bit beat up.   Yummy-- not homemade though-- it is Betty Crocker cookie mix.  Our favorite since it isn't  too strong. I baked only 5 minutes so the cookies stay soft and moist.

Chocolate Dipped Cranberry Cookies

Yum! These cookies are tasty! Sweet with little zings of cranberry goodness.

Found the recipe in the Oklahoma Farmer and Rancher newspaper. The cookie dough is just a basic shortning type dough with 2 cups of chopped fresh cranberries (frz should work too) mixed in. I used a food processor for a finer chop. I did try with a knife first but it was too difficult. Cranberries went flying everywhere!

After the baked cookies cool, dip them in your favorite melted chocolate and coat with chopped nuts. I added a dab of butter to the chocolate and I pressed the nuts in so they would stick better.

Since this was the experimental first batch, I left half plain. We took the less messy plain ones to eat on a roadtrip; Talon and I couldn't stop eating them.
We (even Talon) actually prefer them plain since too much chocolate overwhelms the delicate taste of the cookies---- but we gobbled the chocolate ones too.

Next time, for speed and convenience, I plan to add finely chopped nuts to the dough and maybe a small amount of mini chocolate chips. I'll save the chocolate dipping business for a special occasion.

Pumpkin Gingerbread Cookies!

What fun! After the carshow and planting our baby pines, Talon and I baked pumpkin shaped gingerbread cookies with lemon flavored glaze and green sugar stems. Perfect ending to a chilly fall day. Made the house smell wonderful! Of course, the best part was eating them! Wish you'd been here! We would've shared!
